Ingredients for Flavorful Vegetable Biryani:

  • 2 cups Basmati rice
  • 4 cups water
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • Salt to taste

For the Biryani:

  • 2 tbsp vegetable oil
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 cup mixed vegetables (e.g., carrots, peas, beans)
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves
  • 1/4 cup fried onions (for garnish)
  • Saffron strands soaked in 2 tbsp warm milk (optional, for color)
  • Ghee (clarified butter) for drizzling (optional)

Biryani Spice Mix:

  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • Salt to taste

Instructions for Flavorful Vegetable Biryani:

Preparing the Rice:

  • Wash and rinse the Basmati rice until the water runs clear.
  • In a large pot, bring 4 cups of water to a boil. Add the rice, cardamom, cloves, cinnamon, and salt.
  • Cook the rice until it’s 70% cooked (it should still have a slight bite to it). Drain and set aside.

Sautéing the Vegetables:

  • In a large skillet, heat vegetable oil over medium-high heat.
  • Add the sliced onions and sauté until they turn golden brown.
  • Add the ginger paste and garlic paste, cooking for a couple of minutes until the raw smell disappears.
  • Add the mixed vegetables and sauté for a few minutes until they begin to soften.

Adding Biryani Spice Mix:

  • Stir in the red chili powder, turmeric powder, garam masala, and salt.
  •  Cook for a few minutes until the spices are fragrant.

Layering the Biryani:

  • In a heavy-bottomed, wide pot, add a layer of cooked rice followed by a layer of the vegetable mixture. Sprinkle fresh coriander and mint leaves.
  • Repeat the layers until all the rice and vegetables are used up.

Dum Cooking:

  • Seal the pot with a tight-fitting lid or aluminum foil.
  • Cook on low heat for 20-25 minutes (Dum cooking) to allow the flavors to meld and the rice to cook fully.
