  • 1 onion, thinly sliced
  • 1/2 cup boiled and mashed potatoes
  • 1/4 cup green peas
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves, chopped
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil for cooking

For Assembling:

  • Schezwan sauce
  • Tomato ketchup
  • Grated cheese
  • Chopped coriander leaves

Instructions:

Preparing the Dosa Batter:

  • Rinse the rice, urad dal, flattened rice, and fenugreek seeds separately.
  • Soak them in water for 4-6 hours or overnight.
  • Drain the soaked ingredients and transfer them to a blender.
  • Grind into a smooth batter, adding water as needed.
  • Add salt to the batter and let it ferment for 8-12 hours or until it doubles in volume.

Making the Jini Dosa Stuffing:

  • In a pan, heat oil and add mustard seeds and cumin seeds.
  • Once the seeds splutter, add chopped onions, ginger-garlic paste, and curry leaves. Sauté until the onions turn golden brown.
  • Add mixed vegetables, green peas, and boiled mashed potatoes. Cook until the vegetables are tender.
  • Stir in turmeric powder, salt, and chopped green chilies. Cook for an additional 2-3 minutes. Set aside.

Making Jini Dosa:

  • Heat a dosa griddle (tawa) until hot. Stir the dosa batter well.
  • Pour a ladleful of batter onto the griddle and spread it in a circular motion to form a thin dosa.
  • Drizzle oil over the dosa and cook until the edges turn golden brown.
  • Flip the dosa and cook the other side until it’s lightly browned.
