  • 1/2 cup parboiled rice
  • 1/4 cup split Bengal gram (chana dal)
  • 1/4 cup split pigeon peas (toor dal)
  • 1/4 cup split black gram (urad dal)
  • 1/4 cup yellow split peas (moong dal)
  • 1 tsp cumin seeds
  • 1-2 dry red chilies (adjust to taste)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water for soaking and grinding

For the Adai Dosa Toppings:

  • Finely chopped onions
  • Chopped cilantro (coriander leaves)
  • Grated coconut
  • Sliced green chilies (optional)

For Cooking:

  • Oil or ghee

Instructions:

Preparing the Adai Dosa Batter:

  • Rinse the raw rice, parboiled rice, chana dal, toor dal, urad dal, and moong dal separately.
  • Soak them in water for 4-6 hours or preferably overnight.
  • Drain the soaked ingredients and transfer them to a blender.
  • Add cumin seeds, dry red chilies, asafoetida, and salt to the blender.
  • Grind the ingredients into a coarse batter. Add water as needed, but the batter should be thicker than regular dosa batter.

Making Adai Dosa:

  • Heat a non-stick or well-seasoned cast-iron griddle (tawa) over medium heat.
  • Grease the griddle with a little oil or ghee.
  • Pour a ladleful of Adai Dosa batter onto the center of the griddle.
  • Spread the batter in a circular motion to form a thick pancake.
  • Sprinkle finely chopped onions, chopped cilantro, grated coconut, and sliced green chilies (if using) over the Adai.
  • Drizzle a little oil or ghee around the edges of the Adai.
  • Cook until the edges turn golden brown and the toppings are cooked.
  • Flip the Adai and cook the other side until it’s lightly browned.
  • Remove from the griddle and repeat the process for the remaining batter.

Serving:

  • Adai Dosa is traditionally served hot with coconut chutney, jaggery, or avial (a mixed vegetable curry).

Tips for Making Perfect Adai Dosa:

  • The batter should be coarser than regular dosa batter to give the Adai its characteristic texture.
  • You can customize the toppings based on your preferences, adding ingredients like grated carrots or chopped spinach for added nutrition.
  • Adjust the number of red chilies according to your spice tolerance.

Adai Dosa, with its robust texture and nutrient-rich profile, is a testament to the diversity and depth of South Indian cuisine.
