Ingredients for Mutton Biryani:

For Marinating the Mutton:

  • 500g mutton pieces
  • 1 cup yogurt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tbsp lemon juice
  • Salt to taste

For the Rice:

  • 2 cups Basmati rice
  • 4 cups water
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • Salt to taste

For the Biryani:

  • 2 tbsp vegetable oil
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves
  • 1/4 cup fried onions (for garnish)
  • Saffron strands soaked in 2 tbsp warm milk (optional, for color)
  • Ghee (clarified butter) for drizzling (optional)

Instructions for Mutton Biryani:

Marinating the Mutton:

  • In a bowl, combine yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt.
  • Add the mutton pieces to the marinade, ensuring they are well coated. Marinate for at least 2 hours in the refrigerator.

Preparing the Rice:

  • Wash and rinse the Basmati rice until the water runs clear.
  • In a large pot, bring 4 cups of water to a boil. Add the rice, cardamom, cloves, cinnamon, and salt.
  • Cook the rice until it’s 70% cooked (it should still have a slight bite to it). Drain and set aside.

Cooking the Mutton:

  • In a large, heavy-bottomed skillet, heat vegetable oil over medium-high heat.
  • Add the sliced onions and sauté until they turn golden brown.
  • Add the marinated mutton and cook until it’s no longer pink, and the spices are fragrant.
  • Add the chopped tomatoes and green chilies, cooking until the tomatoes are soft.

Layering the Biryani:

  • In a heavy-bottomed, wide pot, add a layer of cooked rice followed by a layer of the mutton mixture. Sprinkle fresh coriander and mint leaves.
  • Repeat the layers until all the rice and mutton are used up.
  • If using saffron, drizzle it over the top layer and garnish with fried onions.
  • Drizzle ghee over the top (optional).

Dum Cooking:

  • Seal the pot with a tight-fitting lid or aluminum foil.
  • Cook on low heat for 20-25 minutes (dum cooking) to allow the flavors to meld and the rice to cook fully.

Serving:

  • Gently fluff the Biryani with a fork, ensuring that the layers remain intact.
  • Serve hot with raita, salad, or your favorite side dishes.

Mutton Biryani is the epitome of indulgence, and with this recipe, you can recreate the magic at home. The symphony of spices, tender mutton, and fragrant Basmati rice makes this dish a true feast for the senses. Impress your family and friends with your culinary skills, and savor the rich flavors of South Asia with this homemade Mouth-watering Mutton Biryani.
